Carrot Cake is such a flavorful cake that is always moist and decadent. It is full of spices such as cinnamon and nutmeg, which gives it a warm flavor. This was my first time making it and it turned out delicious! I made the carrot cake as cupcakes to be able to use them for cake pops too! Along with my carrot cake cupcakes, I had to make cream cheese frosting. This time, with a twist. They were amazing and really easy!
Carrot Cake Cupcakes
These cupcakes were really great for Easter. I added cute little carrots on top with green sprinkles as grass! They were so good. The carrot cake was filled with carrots and walnuts. These two ingredients are key to making it have crunchy little bits inside. Then the spices in it make it very elegant and homey. Adding the Cream Cheese Frosting (recipe below) makes them even better. All the ingredients combined together makes these one of the best cupcakes ever! The cupcakes are easy and fun to make. Plus, they are a light treat for any time of the year.
Cream Cheese Frosting
I did a Cream Cheese Frosting recipe in the past for my Red Velvet Cakes, but this one is far better for spiced cakes because of adding the cinnamon to it. This makes the taste of the frosting blend better with the cake. Cream cheese frosting is my favorite frosting because of the smooth and creamy flavor it has, and what it adds to any cake it's put onto. It is easy to make and goes well with everything.
These carrot cake cupcakes with cream cheese frosting came out amazing! I loved them. The reason I like carrot cake so much is because of its unique taste. The spices along with the cream cheese make for a perfect bite. I made them for Easter, and everyone loved them! I also used these recipes for some great Carrot Cake Pops!
