A recipe that is so easy, you just dump all your ingredients into a pot! Vegetable soup is surprisingly not always vegan, as many vegetable broths aren't fully vegan. This is why I stress the fact that if you are cooking vegan meals, you must check the ingredients list on the back of your products. I added yellow peppers to this soup, which I have never done before. But, I was surprised when it changed the flavor of the whole dish. The stars of this recipe were the yellow pepper and the smoked paprika. They bring a smoky and refreshing flavor to the soup. Cannelini beans are my favorite, so I added those for protein. They go best in soups. The blended tomatoes thicken up the soup and add to the broth as the base. Cooking your olive oil, garlic, and onion first is what starts the flavors that bring the soup together. When you make any soup, you want to start with doing this because it will be the base taste of your soup. You don't taste the onions, but trust me, it makes any recipe better!
