Vegetable Soups are one of the easiest things you can make. They are healthy and nutritious while being filling and delicious. This recipe is what I like to call a dump meal! A recipe that is so easy, you just dump all your ingredients into a pot! Vegetable soup can sometimes be bland and unfulfilling, but my recipe will leave you with a full belly and a smile on that face!


Vegetable Soup Recipe

Vegetable soup is surprisingly not always vegan, as many vegetable broths aren't fully vegan. This is why I stress the fact that if you are cooking vegan meals, you must check the ingredients list on the back of your products. I added yellow peppers to this soup, which I have never done before. But, I was surprised when it changed the flavor of the whole dish. The stars of this recipe were the yellow pepper and the smoked paprika. They bring a smoky and refreshing flavor to the soup. Cannelini beans are my favorite, so I added those for protein. They go best in soups. The blended tomatoes thicken up the soup and add to the broth as the base. Cooking your olive oil, garlic, and onion first is what starts the flavors that bring the soup together. When you make any soup, you want to start with doing this because it will be the base taste of your soup. You don't taste the onions, but trust me, it makes any recipe better!


This is another vegan recipe I created for my mom, who is vegan! We love this soup. It is so good and filling. You know you're getting your week's worth of vegetables from this one! I love how easy it is, and it is also budget-friendly. You can just see what kind of vegetables you have around the house, and throw them in with some broth or liquids. The hour it takes to cook will fly by as the beautiful aromas from the soup will fill the kitchen. I recommend this soup to anyone and everyone! Very Good! Enjoy!
